This is an unusual European vegetable that is generally blanched to get the creamy white colouring.
The plant is grown during the cooler seasons and harvested after 4-5 months, to blanch lift the plants, cut the outer leaves off and replant in a pot indoors, cover to exclude light. This way the plants will continue growing for 8-12 weeks to become white and free from bitterness.
Once harvested, witloof can be baked, boiled, or stuffed.
In autumn to Winter for warm climates, in cool temperate climates grow early Spring.
